| Sushi with Gusto would be very pleased to offer its sushi services to institutions that feel there is a sufficient demand for a sushi program. |

| We would provide a trained sushi chef with ServSafe® certification for each sushi bar. Institutions would have nothing to do with the inventory or waste. The rental figure is twenty-five percent (25%) regardless of sales. |

Where possible, we would like to have the sushi chef working behind the sushi display. The "show" and interaction with customers is very important. We also understand that there are situations where this is physically impossible. In these cases where this is not possible, we would require a workstation in the kitchen.

| Whether we are at the display area or in the kitchen, we would need the following: |

- One preparation table measuring 6 feet in length.
- Refrigeration near the preparation table: 2ft x 2ft x 4ft with 3 shelves. (Items 3 through 5 below would not have to be in the immediate vicinity of the sushi bar).
- Space in a walk-in cooler: 2ft deep x 6ft wide x 6ft tall, 3 shelves.
- Space in a walk-in freezer: 2ft deep x 6ft wide x 6ft tall, 3 shelves.
- Space in dry storage: 4ft deep x 6ft wide x 6ft tall, 3 shelves.
- Access to a three-piece sink and a hand sink. Since each county's health department has different requirements regarding locations of sinks relative to food preparers, the proximity of the sinks would have to be decided on an individual basis.

Generally speaking, if sales were in the two to four thousand dollar ($2,000 to $4,000) range, we would require four (4) feet of display shelving having two tiers. If sales were over four thousand dollars ($4,000) a week, we would need six (6) feet of product display. |
